Preheat oven to 175 degrees. Pans with paper cupcake line.
Combine flour, the sugar, baking powder and salt in a large mixing bowl. Add the vegetable shortening, milk and vanilla. Blend for 1 minute at medium speed. Scratch the side of the bowl with a spatula.
Add eggs to mixture. Blend for 1 minute at medium speed. Scrape Bowl again. Beat on high speed for 1 minute and 30 seconds until well mixed.
Pour the mixture into the cupcake paper up to the 1/2 to 2/3.
Bake for 20 to 25 minutes or until a toothpick inserted in the Center comes out clean.
Allow to cool for 5 minutes in pans then, Remove and place on wire racks that to cool completely.
Once cupcakes are completely cooled, Frost with your favorite recipe for meringue or decorate as you wish.
